Organic single estate whisky

Thy Whisky is an organic whisky made on the Gyrup family estate in Thy, on the west coast of Denmark. We use only grains grown in our own fields to produce our whisky and spirits—malted, mashed, and distilled on the estate. 
We believe in terroir and a local mindset. Our aim is to create whisky with a true sense of place and a distinctive expression of our grains and terroir— from field to bottle, 100% organic and family-owned.

Our three core expressions—Spelt-Rye (a whisky made from malted spelt, rye, and barley), Thy (single malt whisky), and Bøg (a single malt whisky made primarily from beechwood-smoked malt)—embody the essence of our organic single-estate distillery.
In addition, we release approximately ten limited editions each year: warehouse experiments that refine our core expressions and explore new flavour profiles.

With farm, malthouse, and distillery under one roof, we minimise transportation, turn waste into a resource, and are self-sufficient through wind and solar energy.
Reducing carbon emissions and improving sustainability in every aspect of our production and packaging is an ongoing journey.
As certified organic farmers, we are committed to careful regenerative farming practices, using cover crops and crop rotation to preserve soil fertility, support biodiversity, and safeguard the precious groundwater beneath our land.
